I want to learn to count calories for food that does not come in packages?

Answer:
www.fitday.com you type in the food and it tells you everything in it...calories, nutrients, minerals.it also tracks your food for the day and tells you where you get your nutrients from ex...proteins, carbs, fats...and it is free!
weight watchers does the point system and that ties into calories, fiber, etc. Maybe that would help you figure it out a little. Otherwise check online for nutrition sites
You can purchase a book that has most foods listed (packaged and fresh - even restaurants) and look them up. There are a few that I like (despite the comments they have received). Corrine Netzer makes a great one that includes all kinds of information on fresh, packaged %26 restaurant foods. That's the first link. The other one is easier to use and includes Glycemic Index info, that's the second link. You have to buy this one used or new from another seller. Amazon doesn't have it anymore, but you can look it up and see what the book is about.
Hope that helps you out!
